” Moujadara” with salad
Delicious vegetarian lenten food with cherry tomatoes and cucumber salad.Enjoy

Ingredients:
2 cups brown lentils (clean wash and drain)
3/4 cups rice (wash and drain)
1/2 cup of olive oil
3 large onions sliced thinly
1 teaspoon coarse sea salt

Salad:
1.Dice tomatoes and cucumbers ,chop few leaves parsley and put them in a bowl

Salad dressing:
2 freshly squeezed lemon juice
5 tablespoons extra virgin olive- oil
1 clove of garlic,mashed
1/4 teaspoon coarse sea salt
1/2 teaspoon dried mint
In a hand blender add garlic,oil,lemon juice,dried mint,salt and blend all well for few seconds,pour over tomatoes,cucumbers mix and serve.

Preparation:
1.In a large pot add 9 cups water. Bring to boil,add 2 cups lentil,cook semi- covered at medium-high heat for 20 minutes.
2.Add 3/4 cup rice,salt and cook additional 25 minutes at medium-low heat,until the water is absorbed .
3. Heat 1/2 cup olive oil in a skillet,add sliced onions and fry them at medium-low heat,until golden brown about 30 minutes.
4. Remove fried onions,keep aside for garnish; pour hot oil in hot moujadara and continue cooking and stirring for 2 minutes,take out of heat.
5. Arrange hot moujadara,in individual plates,garnish the top with fried onions.
Serve room temperature or cold with a bowl of salad.
