Ingredients: For the filling:
4 tablespoons olive oil
2 large onions chopped
2 large diced green pepper
2 large diced red bell pepper
1 cup pine nuts
1 cup chopped walnuts
1 teaspoon coarse sea salt
2 teaspoons Lebanese seven spices
2 teaspoons sumac
1/2 teaspoon black pepper

Ingredients:For the dough
6 large potatoes
2 cups fine bulgur wheat #1
1 cup flour
2 teaspoons all spice
1/2 teaspoon black pepper
2 teaspoons hot red pepper powder
3 teaspoons coarse sea salt

Topping:
1/4 cup extra virgin olive oil (to brush over kibbeh before cooking)
Extra 2 tablespoons olive oil to grease the bottom of the baking dish .

Preparation:filling:
1.Chop,dice finely onions,green pepper and red bell pepper.
2.Heat a large saute pan add 4 tablespoons olive oil.Add diced onions and peppers,1 teaspoon salt, 1/2 teaspoon black pepper and saute over medium-high heat for 10 minutes.
3. Add the pine nuts, chopped walnuts,Lebanese seven spices and sumac and saute for another 5 minutes.Take out from heat let cool.

Preparation the dough:
1.Rinse the bulgur and then let sit for 20 minutes to soak up the excess water.
2.Wash,peel and roughly chop the potatoes. Add to boiling water and cook at high temperature uncovered until soft . Mash them to a very smooth mixture, using hand blender when still hot.
3.In a large bowl, add bulgur,flour, all spice, red hot powder pepper, black pepper, and 3 teaspoons coarse salt, mix for a second then add hot or room temperate mashed potatoes knead all ingredients together with your hand until a smooth dough forms, about 3-4 minutes.Divide the dough into half.

Assembling the kibbeh:
1.Preheat oven to 400 degrees.
2.Grease with 2 tablespoons olive oil a baking dish11x15 (28x38cm.)
3. Coat your hands with water and using half of the dough mixture, flatten the dough and form an even layer on the bottom of the greased baking dish .
4.Cover evenly with cold filling mixture.Divide the remaining kibbeh dough into small portions.Dip hands in water flatten each small dough portions between your hands and cover over the filling,smooth out the layer,and with a knife,cut kibbeh into square shapes.
5. Drizzle and brush the top with 4 tablespoons olive oil.
6. Place baking dish in preheated oven and bake at 400 degrees F. for 55 minutes until golden brown.
Take out from oven and let the kibbeh rest for 15 minutes before serving
