Quinoa salad (Lenten salad)

Ingredients:
2 cups Quinoa
1/2 bunch chopped parsley
1 green pepper,diced
1 bunch of green onion sliced thinly – keep one piece for sauce
3 or 4 medium tomatoes diced
2 freshly squeezed lemon juice
4 tablespoons olive oil
1/2 teaspoon coarse sea salt
Preparation:
1.Cook quinoa according to package,keep aside,to cool.
2.Start chopping, the vegetables.
3.In a salad bowl add cold quinoa,with diced and chopped vegetables.
4.In container,of hand blender add olive oil,lemon ,salt and one piece of whole green onion ,mix very well.Pour over quinoa,combine well serve cold or room temperature.
