Stuffed vegetarian Hot Red Peppers with Olive oil (zeytov gdzou bghbeghi dolma)
Oven baked stuffed peppers. Serve them cold, it’s so good .Instead of hot red peppers you can use sweet bell peppers too all are delicious and good for you.Enjoy

Ingredients:
20 medium hot red peppers
3/4 cup extra virgin olive oil
4 large onions chopped
1-1/2 cups short-grain rice washed and drained
1 tablespoon tomato paste
1/2 teaspoon pepper paste (if the peppers are hot don’t add or add sweet pepper paste)
1-1/2 teaspoons coarse sea salt
2 large lemons (10 tablespoons) freshly squeezed lemon juice
1/4 cup chopped parsley
3 cups cold water

Preparation:
1.Slice off the top part of peppers, core seed and wash,keep aside.
2.In a container of hand blender add parsley leaves,tomato paste,hot pepper paste,lemon juice and salt ,pulse few seconds until the parsley finely chopped .
3.In a stainless steel pan add 3/4 cup olive oil and chopped onions, saute’ over medium heat for 5 minutes .
4.Add in rice with parsley mixture, mix well ,take out of heat ,keep aside to cool.
5.Stuff the peppers with prepared filling cover each pepper with there top.
6.Arrange stuffed peppers in an oven proof baking dish,pour water over the top just to cover the peppers.
7.Preheat oven to 350 F.
8.Cover baking dish with wax paper and another layer of aluminum foil.
9.Place the baking dish in oven and bake for 1 and 30 minutes,or until the rice is cooked.remove the foil ,but leave the wax paper on it while it cools completely.Discard the wax paper; cover with plastic wrap refrigerate until cold.

Tip:This dish best prepared a day ahead,covered and refrigerated until ready to serve.
