Armenian vegetarian Vosbov kufteh .
Serve with bowl of tomato salad and Enjoy the goodness of vegetarian food.

Ingredients:
2 cups red lentils
4-1/2 cups of boiled water
1 tablespoon coarse sea salt
1-1/2 cups fine bulgur No 1
1 tablespoon cumin
2 medium onions finely chopped
1/2 cup extra virgin olive oil
1 tablespoon hot red pepper paste
1 teaspoon paprika
1/2 teaspoon extra salt

Ingredients for Salad:
5medium red tomatoes diced
1/2 bunch of parsley cleaned ,washed and chopped very finely
8 green onions chopped (or one medium white onion)
1 teaspoon coarse sea salt
Preparation for salad:
– Dice tomatoes into small pieces.
-Chop onions and parsley finely.
-Place in a bowl add the salt toss everything, keep aside.

Preparation:
1.Clean,wash lentils,put them in deep pot of boiled water add salt and cook uncovered at medium heat about 30 minutes,or until lentil cooked and creamy.
2.Remove from heat add and mix cumin,hot red pepper paste,paprika, salt,and burgul.
3. Cover the pan with lid,keep aside to absorb the water of the lentil,about 20 minutes .
4.Meanwhile chop the onions finely.Heat a skillet over medium temperature, add oil and saute’ onions, until there golden.
5.Add sauteed onions with the oil over cooked lentil mixture, use spoon to mix them.
6.Transfer to a large pan or dish knead for few minutes;dip your hands in cold water,and start making into smooth bite size kibbehs.
7.Arrange kibbehs in an individual serving plate, and spoon the tomato-parsley salad in the middle .
Serve room temperature or even cold it’s very delicious.
