Vegetarian Lebanese food (Lenten food)
Ingredients:
4x 375g.Ready frozen packages
3 large onions diced
12 cloves garlic minced
1 jar 796ml.Organic tomato basil sauce .
Water the same quantity of the jar (796ml.)
3/4 cup extra virgin olive oil
2 large freshly squeezed lemon juice (5 tablespoons)
1 tablespoon tomato paste
1/2 teaspoon all-spice
1/2 teaspoon dry coriander
1/2 teaspoon red hot Armenian pepper
1/2 teaspoon freshly ground black pepper
1 teaspoon coarse sea salt
1 teaspoon paprika
1 tablespoon chopped parsley to sprinkle over cooked okra
Preparation:
1.Put the okras in colander and rinse under cold water.
2.Heat the oil in large deep skillet ,add chopped onions saute’ for 7-8 minutes over medium heat,add minced garlic.Add the okra and continue cooking and occasionally mixing (with spatula )about 8-10 minutes.
3.Add the tomato sauce,tomato paste ,all-spice,black pepper, paprika,red hot pepper flakes,coriander salt and lemon juice.
4.Add water bring to boil,reduce heat to medium-low, cover with the lid and cook for 30 minutes,uncover the lid and continue cooking 30 minutes more until slightly thickened the sauce.Let it cool .
5.Arrange in a plate sprinkle with chopped parsley and serve cold.
