Cherry-Yogurt Cake
Ingredients:
for the cake:
1 cup unsalted butter, softened
2 cups sugar
3 large eggs
1 cup plain yogurt
1 cup fresh cherries,pitted and diced
1 tablespoon vanilla extract
2 -1/2 cups all-purpose flour. Keep aside 1/4 cup to mix later with cherries
1/2 teaspoon baking soda
1/2 teaspoon salt
For the topping:
1/2 cup silvered (sliced)almonds
2 teaspoons sugar
1 tablespoon melted unsalted butter
Preparation:
1. Preheat oven 325 degrees F..Generously grease a (12 cup) Bunt-pan with unsalted butter.
2.In a small bowl add topping ingredients,mix and scatter mixture evenly into bottom of greased pan.
3.Sift and mix together flour ( 2 &1/4 cup),baking soda and salt.Keep aside.
4.Using electric mixer on a medium speed,beat butter and sugar until light and fluffy.
5.Add eggs,one at a time,mixing well after each addition.Add and mix vanilla .
6.Gradually add flour mixture,alternating with yogurt.Mix until well blended.
7.In a small container add fresh diced cherries with 1/4 cup flour and toss to coat.
8.Add cherries into batter and gently mix with spatula.
Pour the batter into prepared pan,spreading evenly.
9. Bake in preheated oven at 325 degrees F. for 60-65 minutes,or until a tooth pick inserted into the center of the cake comes out clean.
10. Cool cake in pan for 20 minutes.Then transfer to wire rack to cool completely.Cover and keep in fridge.
