BBQ.Chicken with vegetables and garlic sauce
This is our food for today,BBQ.chicken with barbecued vegetables and quick preparation garlic sauce .Healthy and tasty. .Enjoy.
Ingredients:
1 whole chicken
1 teaspoon paprika
1/2 teaspoon all-spice
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon salt
vegetables
1 small broccoli florets
8 Red potatoes
7 small onions
2 garlic bulbs
3 tablespoons olive oil to drizzle over broccoli florets,potatoes,onions and garlic bulbs
Ingredients:For garlic sauce
5 cloves,garlic
1 medium potato ,peeled and cubed
2 tablespoons mayonnaise
1/2 teaspoon coarse sea salt
1 cup water with 1/4 teaspoon coarse salt to boil the potatoes
Preparation:for garlic sauce
1.In a small saucepan add water with salt,bring to boil add potatoes and cook until fork tender.
2.Drain potatoes in strainer,keep aside to cool completely in room temperature.
3.In mortar add garlic with 1/2 teaspoon salt and mash them very well with pastel.
4.In container of hand blender add cooled potatoes,mashed garlic,mayonnaise and blend for few seconds until smooth mixture.
5.Transfer to a dish cover with a plastic wrap and refrigerate.
Serve cold with chicken.
Preparation:For BBQ.chicken & vegetables
1. In a large plastic container add water with half cup of white vinegar,put chicken in and soak for 30 minutes.
2.Peel off the skin and cut the chicken into 5 pieces, wash under cold water and drain in a strainer.
3.Mix spices,salt and sprinkle chicken pieces,cover and refrigerate overnight.
4.Preheat gas BBQ high
5.Wash broccoli florets under running cold water,drizzle with olive oil and put on the top part of the gas BBQ.
6.Wash and cut red potatoes without peeling,arrange them in aluminium foil add some salt, pepper and drizzle with oil.
6.Arrange onions and garlic bulbs on a aluminium foil drizzle with oil.
7.Transfer all vegetables and marinated chicken pieces to hot grill and barbecue covered about 50 minutes,keep your barbecue in low heat away from direct heat.Once that side of chicken or vegetables are browned and cooked,only then you flip it, broccoli browns quicker then others,make sure not to burn them.
8.Put cooked chicken in a dish ,cover with aluminium foil to rest for 20 minutes.
9.Arrange chicken in a large dish with barbecue vegetables around and serve with garlic sauce
