BBQ.Quails
– This appetizer is so good you’ll be proud to serve to your family and guests, especially summer time .This is my own recipe it’s simply delicious,enjoy.
Ingredients:
6 fresh quails
2 tablespoons extra virgin olive oil
1 small onion ,cut to four pieces
2 cloves fresh garlic
1/2 teaspoon hot red pepper paste
1 teaspoon paprika
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup white vinegar,with water to soak the quails
Preparation:
1.Wash very well the quails ,under cold running water.In a bowl add enough water and 1/2 cup vinegar ,and soak the quails for 15 minutes.Drain in stainless steel colander.
2.Use kitchen shears to cut out the backbones of the quail,then flatten them with your hands ,so they cook evenly.I take extra step of removing the ribs under the breast with my hands .
3.In a container of hand blender ,add olive oil,onion,garlic,red pepper paste,black pepper,paprika,salt and blend them all until smooth mixture.
4.In a glass dish ,add each quails and rub all over with the mixture ,cover and marinate in fridge at least 1-1/2 hours or overnight.
5.Barbecue on hot grill ,start with breast side up ,keep your barbeque in low heat away from direct heat.Once that side is cooked and browned,only then you flip it.
6.Transfer to a dish cover and keep aside for 10 minutes then serve.
