Stuffed Swiss Chard leaves – Lenten food-

Ingredients:
2 bunches of fresh green Swiss chard
4 large onions chopped
1/4 cup extra virgin olive oil
1-1/2 cups short grain rice
2 tablespoons tomato paste
3 freshly squeezed lemon juice (1/2 cup )
1 teaspoon coarse sea salt
1/2 teaspoon hot red pepper paste
for water solution:
3 cups water
1 teaspoon olive oil
1/2 teaspoon coarse sea salt
2 tablespoons tomato paste
Preparation :
1.Wash the Swiss chard few times ,cut the stalks from the leaves.In a large pot add water bring to boil,immerse the Swiss chard leaves and the stalks into boiling water for 1 minute, drain in colander ,keep aside.
2.In a stainless steel dip skillet heat olive oil add chopped onions, saute’ for 5 minutes over medium-low heat, add washed and drained rice, lemon juice, tomato paste,pepper paste and salt mix all and cook just for 1 minute take out of heat keep aside to cool.
3.Spread out each Swiss chard leaf, put 1 generous teaspoon of stuffing ,fold the sides in and roll, if leaves are big cut them into half.
4. Arrange the Swiss chard stalks on the bottom of the pot,place stuffed Swiss chard on top.
5.Mix tomato paste,salt,olive oil with water,pour over stuffed leaves, put a dish on top ,cover with a lid,cook over medium temperature for 1 hour.Let it cool in the pot.
Serve room temperature or cold.
