” BABA GHANOUSH “( Moutabal with bbq eggplant)
Baba ghanoush a Middle Eastern spread, and dip, is similar to hummus, but is made with eggplant instead of chickpeas

INGREDIENTS:
3 large eggplants
5 cloves garlic
1/4 cup lemon juice
5 tbsp tahini
1teaspoon kosher sea salt
2 tablespoon olive oil and extra olive oil for top
2 tbsp fresh chopped parsley for the top decoration
1 tomato chopped small cubes for decoration too

PREPARATION:
Mix with hand blender, garlic ,olive oil mash them very well,add lemon juice and salt.Set aside.
Barbecue whole big eggplants or slice eggplant in half, and broil them in oven for 10 minutes each side .

Allow to cool slightly, then scoop out inside of eggplants, leaving skin behind.
In a bowl using hand blender first smash eggplants, then add mix of,(garlic,olive oil ,lemon juice,)then add tahini mix all very well until smooth. Mixture will be somewhat thick.arrange in a dish, decorate with chopped parsley and chopped tomatoes and drizzle with extra virgin olive oil.
