Green olive Walnut appetizer /Salad
Armenian olive appetizer./Salad
Tasty,very easy preparation.Serve as an appetizer,with small pieces of pita breads;or add over your favorite sandwich,it’s very good.Enjoy
Ingredients: For 4 cups
3 cups pitted green olives,stuffed with pimento
(Manzanilla)
1 cup chopped walnuts
1/2 cup finely chopped parsley
1/4 cup extra virgin olive oil
2 tablespoons freshly squeezed lemon juice
1/2 teaspoon Armenian hot red pepper or 1/8 teaspoon cayenne pepper
5-6 green onions finely sliced (only the white part) or 1 medium onion
Preparation:
1.Place the olives in a strainer and rinse under cold water for a second,to reduce little bit the salty taste.Drain well and slice the olives keep aside.
2.Chop walnuts in food processor.Keep aside.
3.Finely chop parsley.Slice green onions.Keep one piece of onion to mix with the dressing.
4.Prepare the dressing:In a container of hand blender, add 1 piece of green onion(from green onions),olive oil ,lemon juice,hot red pepper and mash well for a minute until all combined.(Or in a separate bowl whisk the oil,lemon juice and pepper,without adding the onion.)
5.In a medium bowl,add sliced olives,walnuts,parsley, onions.Pour the dressing,mix with a spoon.
6.Cover and refrigerate at least for 1 hour or overnight.
Serve cold
