Red Lentil Soup / Vartabedi Abour /

Ingredients:(Serves 10)
4 cups cleaned washed and drained red (orange) lentils
3/4 cup of rice washed and drained
4 large (4 cups) diced onions,(2 cups to add in boiling water with lentil and rice ,and 2 cups for frying
1/2 cup extra virgin olive-oil
2 tablespoons coarse sea salt
Preparation:
1.In a large stock pot ,add 14 cups of water bring to boil.
2.Add , stir in washed,drained lentil,rice and 2 cups of diced onions,continue cooking at high heat until boils,reduce heat to medium cover with lid and cook stirring occasionally for 45 minutes.
2.Heat a skillet over stove, add 1/2 cup of extra virgin olive oil ,add remaining 2 cups of chopped onions , saute’ and fry about 8-10 minutes or until slightly browned .
3.Pour and stir fried onions with there oil into the soup pot,add salt cover with lid and continue cooking, stirring occasionally 15 minutes more .
ladle hot soup into a bowl, garnish with red pepper flakes and serve with toasted breads and olives.
Tip:
– you can add chicken bouillon to the water but adjust the salt,and reduce the quantity of onions and olive oil to half .
