This isn’t regular kenefe recipe,it’s first time preparation that I invented this morning for breakfast.
I had very salty cheese(Twisted cheese) in my fridge,overnight I soaked them in water,morning I squeezed well to obtain unsalted cheese. I cooked in pot,with other ingredients,it turned very good.I served hot kenefe’ over toasted bread, drizzled with little honey and orange blossom water,enjoyed with cup of hot fresh coffee it was very good,you can serve as is too without adding anything, both are very tasty.Enjoy
Ingredients:
1/2 cup unsalted butter
1 cup semolina regular (seemid)
2-1/2 cups milk
1 cup sugar
2 -1/2 cups unsalted cheese (In this recipe I used 1-1/2 cups squeezed twisted cheese +1 cup Mozzarella cheese)
1 teaspoon orange blossom water (may Zaher)
Topping :
1/2 teaspoon cinnamon powder
1/4 cup walnuts
Toast bread and honey is optional
Preparation:
1.Heat a medium cooking pot,add butter,then add semolina and cook at high heat for 2 minutes,stirring constantly make sure not to burn them.
2.Add milk,sugar mix and bring to boil,reduce the heat
to medium,add cheese,cook stirring constantly about 10-12 minutes,or until cheese is combined.
3.Pour hot mixture into a small baking dish (pyrex) leave aside for 15 minutes.
Serve hot or room temperature.
