Ingredients :
10 zucchini
1/2 kilo ground meat (beef) this dish is with ground veal
1 cup of round rice
1/2 cup water
1 teaspoon Armenian hot red pepper
1-1/2 teaspoon all spice
1/2 teaspoon cinnamon
1-1/2 teaspoon kosher salt
2 tablespoons minced garlic (10 cloves)(1 tablespoon for filling and one for frying with mint)
7 cups of plain yogurt
2 tablespoons corn flour
1 tablespoon dried mint
2 tablespoon olive oil
preparation:
1.Wash cut the head and the tip of zucchinis ,immerse the head in salt .Core zucchinis with zucchini corer,keep aside.
2.Mix ground meat with rice spices, and 1/2 cup of water.
3.Stuff zucchini with meat mixture.
4.In a large pasta strainer pot add water with 1 tablespoon salt bring to boil add stuffed zucchinis cover with lid, continue boiling for 10 minutes, take out the strainer with zucchinis , keep aside.
5.Dissolve, corn flour with little bit of yogurt, in another medium pot add corn mixture,1/2 teaspoon kosher salt to a cold yogurt , and cook stirring constantly at medium heat until boils. Put stuffed boiled zucchinis in yogurt pot cook uncovered for 30 minutes.
6.Heat a small skillet add oil, garlic saute for few seconds, add the mint mix and pour over yogurt zucchini, continue cooking 5 minute more,and serve hot.
