Stuffed curly Cabbage Leaves
These cabbage rolls are filled with extra lean ground beef, and with mixture of healthy ingredients, perfectly cooked in oven, the smell is unbelievable,it’s healthy light and very tasty.I serve them alone without any side dish.
The ingredients are for large pot,you can reduce the amount to half,for smaller .Enjoy

Ingredients:
2 medium size curly cabbages,each( 1.500kg.)
1 kg. extra lean ground beef
2 cups of medium-short-grain rice washed and drained
10 cloves garlic
1 medium onion
3 freshly squeezed lemon juice (1/2 cup)
1 teaspoon all spice
1 teaspoon freshly ground black pepper
1 teaspoon paprika
1 teaspoon chili paste (hot red pepper)
1-1/2 teaspoons coarse sea salt
1/2 bunch parsley leaves
1 tablespoon tomato paste

Topping tomato sauce:
2 tablespoons olive oil
2 cloves of garlic,minced
1 tablespoon dry mint
1 large can 796ml.tomato puree (3 cups )
4 cups water
3/4 teaspoon coarse sea salt

Preparation:
1.Remove and discard, the middle thick part of both cabbages .
2.Heat water in a cooking pan bring to boil,immerse each cabbage in hot boiling water,one at a time,cover and boil for 2 minutes.Transfer in a colander,to drain.
3.Meanwhile start to prepare the filling.In container of hand blender add parsley leaves,onion,garlic, all-spice,paprika,freshly ground black pepper,coarse sea salt,hot chilli pepper paste ,tomato paste,lemon juice pulse few seconds ,until smooth sauce .
4.Place ground meat and the rice in a large bowl,pour blended mixture,over them, mix well with hands .
5.Separate and detach cabbage leaves, keep large leaves aside,for later use.
6. Spread each cabbage leaf,remove and trim with knife ,the center top part to make leaf more easier to roll up.Place with 1 tablespoon stuffing on each cabbage leaf fold the right and the left sides toward center and roll,tightly.
7.Line a large deep stainless steel pan or a( baking dish) with some cabbage leaves,and arrange cabbage rolls on top,cover again with cabbage leaves.
8.In a container add tomato puree’ with 4 cups water and 3/4 teaspoon salt ,mix keep aside.
9.In a small frying pan add 2 tablespoons olive oil ,minced garlic and 1 tablespoon dried mint saute for 1 minute,add to tomato water solution,mix well with hand electric blender.
10.Pour tomato mint solution on top of cabbage rolls, cover with wax paper,and then cover tightly with aluminum foil .
11.Bake in preheated oven 375 degrees for 1 hour and 45 minutes.

Let it rest covered for 15 minutes, serve hot.
