Potato Kufteh with bulghur
Delicious, tasty vegetarian kufteh dish, with tomato salad .Enjoy.
Ingredients:
2 & 1/2 cups of fine red bulghur
3 cups of mashed potatoes(6 medium potatoes) peel,wash and dice into one inch cuts
1 cup of extra-virgin olive oil
2 large finely chopped onions
1/2 cup tomato puree’ (mashed tomatoes)
1 tablespoon hot red pepper paste
1 tablespoon coarse sea salt
1 teaspoon cumin
1 teaspoon all-spice
1/2 bunch chopped parsley
The salad
4 medium fresh tomatoes diced
1 bunch of green onions sliced
2 freshly squeezed lemon juice
1/2 teaspoon coarse sea salt
1/2 bunch of chopped parsley
Preparation :
1.Boil potatoes about 10 minutes or until soft, drain and mash with hand blender immediately when they still hot, keep aside.
2.Heat olive oil in a saucepan,add chopped onions and saute’ at medium heat about 5-7 minutes, turn off the heat add all-spice,cumin,hot pepper paste, salt and tomato puree’,mix together and keep aside to cool.
3.Meanwhile prepare the salad start chopping ,parsley,tomatoes and green onions,place them in a bowl add squeezed lemon juice and salt mix keep aside.
4.Put bulghur in a large bowl add the onion tomato mixture,knead with hands for few minutes until they hold together,gradually add mashed potatoes,and continue kneading until sticky dough mixture ;make small bite size kufteh pieces & arrange in a dish with salad.
Serve room temperature or cold with
