Ingredients:
1 & 1/2 pound extra lean fresh ground chicken
1 onion finely chopped
6 cloves of garlic minced
1 red bell pepper diced
1 cup fresh chopped mushrooms
1 tomato, seeded and diced
2 carrots, chopped
1 egg
1/2 cup bread crumbs
1 tablespoon Cajun spice
1/2 teaspoon salt
1/2 teaspoon black pepper
Preparation:
1.Preheat an outdoor grill
2.Add 2 tablespoons olive oil to a pan over medium heat, saute’ the onions with garlic,then add bell peppers, mushrooms,tomatoes and carrots,saute’until slightly tender.Set aside and allow all vegetables to cool completely.
3.In a large bowl,add ground chicken sauteed vegetables,egg,bread crumbs and spices,mix and combine well and form into 8 patties .
4.Grill over medium-low heat for 30 minutes per side,until well cooked.Cover with aluminum foil set aside for 5 minutes.
Serve over hamburger bread, with lettuce, tomatoes, pickles,mustard,mayonnaise ,hot red pepper sauce, and oven baked potatoes.
