Fava Beans (Green Broad Beans)
To make lenten food, don’t add yogurt mixture.
Cooked in tomato sauce and topped with yogurt garlic mixture. Delicious food easy to prepare.Enjoy

Ingredients: serves 6
2 packages of 750g.(1.65 lb.)frozen green Broad beans (Fava Beans)
2 medium chopped onions
2 cloves garlic minced
1/2 cup extra virgin olive oil
1 can of 796 ml.Ground /puree/ tomatoes (Pastene)
1 tablespoon coarse sea salt
1/2 teaspoon Armenian red hot pepper flakes
1/2 teaspoon cumin
1/4 teaspoon freshly ground black pepper

Yogurt garlic mixture:
3 cups plain yogurt
1 cloves garlic,
1/4 teaspoon coarse sea salt
Mash garlic with salt,add to yogurt ,mix keep aside.

Preparation:
1.In a large pot add water with 1 teaspoon salt, bring to boil add frozen Green broad beans,when they start to boil cook for 10 minutes,drain and keep aside.
2.Meanwhile in another large pot,heat olive oil add chopped onions saute for 2 minutes, add minced garlic, ground tomatoes ,salt and all spices,mix and cook covered at medium heat for 25 minutes.
3.Add drained green broad beans to tomato sauce mixture,cover the lid and cook at low heat,additional 5 minutes.
Serve warm or cold with yogurt garlic mixture.

Tip:
If you cook with fresh green broad beans,boil more then 10 minutes, until the beans are tender, and can be popped out of their skins,Drain and set aside.
