IZMEER KOUFTEH / Armenian delicious kafta meatballs/.
serves 12
Ingredients:
Meat
2 kilo of very lean finely ground meat ( Chi-kufteh beef meat)
6 cloves garlic
2 tablespoons tomato paste
4 eggs
1 cup washed parsley leaves
1/2 cup breadcrumbs (I used Hot & spicy Bread Crumbs)
1 tablespoon kosher salt
1-1/2 teaspoon all spice
1 teaspoon freshly ground black pepper
1/2 teaspoon Armenian hot red pepper flakes (if you use plain breadcrumbs)
8 tablespoons oil to fry the meatballs ( I use sun flower oil)
Tomato sauce
Ingredients:
1 can of ground/puree tomatoes 796 ml.
4 cups water
4 tablespoons pure malt red vinegar
1/2 teaspoon kosher salt

Preparation:
1.in a container of hand blender ,add eggs ,parsley ,garlic,tomato paste,salt black pepper and all spice ,pulse few times until smooth mixture.
2.In a large bowl add the kafta meat ,breadcrumbs and blended mixture using your hands blend all together .
3.Roll into walnut-size meatballs flatten the balls slightly about 53 pieces.
4.Heat a large skillet add oil (divide oil into few parts ) and fry both sides of meatballs,until lightly browned .
5. In another large pot add 1 tablespoon from fried oil,add tomato puree ,vinegar salt and water ,bring to boil ,add fried meatballs ,cover and cook at medium heat for 45 minutes.
6.Serve hot with pilaf and green salad it’s very delicious .
