Baked Sea Bass
Ingredients:
1.1.500kg.Fresh sea Bass. Cleaned inside with head and tails
1/4 cup olive oil
1/2 teaspoon freshly ground black pepper
1/2 teaspoon sea salt
Preparation:
1.Preheat oven 350 degrees F.
2.Wash under cold water the fish don’t clean the scale.
3.Cover a large pan sheet with aluminum foil.Place the fish on top,brush inside and out with olive oil,and sprinkle with salt and pepper,cover well with aluminum foil.
4.Bake in preheated oven for 35 minutes.
5.Take out from oven,remove the foil and carefully peel the skin off the fish turn the other side and peel again. Discard the skin.
Ingredients: For Fish Stock
11 and 1/2 cups water
2 small onions cut to half
1 bay leaf
1 teaspoon salt
5 black peppercorns
Heads, bones and tails of the fish with the pan juice.
Preparation:For Fish Stock
1.Peel off the skin from both sides of the fish.Discard the skin.
2.Remove the meat carefully from the fish in big pieces,clean from bones and put the meat aside in a dish cover with plastic wrap.
3.In a large saucepan add water,onion,salt,peppercorns,bay leaf. Add heads,bones and tails of the fish with the pan juice .
4.Bring to boil,cover and simmer for 45 minutes.
5.Strain the broth. Discard bones heads and tails of the fish,you’ll have 8 cups of fish stock.
Ingredients: Rice with fish broth
8 cups prepared fish broth
6 large onions (1kg.) thinly sliced
1/2 cup vegetable oil I used corn oil
1/3 cup pine nuts
1/4 cup freshly squeezed lemon juice
1 tablespoon cumin
1/2 teaspoon all-spice
1/2 teaspoon black pepper
4 cups washed and drained Basamati rice
1/2 teaspoon salt when you add rice
Preparation:
1.Heat a skillet,add oil and pine nuts brown them,leave aside in a dish.
2.In the same oil add sliced onions and fry until golden brown in color.Put aside 3 tablespoons fried onions,for decoration .
3. Heat a saucepan,pour in prepared fish broth,then add the rest of fried onions,with cumin,all-spice,black pepper,lemon juice,cover with lid and simmer for 30 minutes.
4.Add washed and drained rice,in the broth with 1/2 teaspoon salt, reduce heat to medium,cover and cook for 25 minutes until all the water has been absorbed .
5.On a serving dish put the rice,arrange on top fish pieces then with fried pine nuts and crispy browned onions.
Serve hot
