Eggplant salad
Healthy ,delicious Salad with oven baked eggplant and vegetables.Enjoy
Ingredients:
2 medium eggplants
2 tomatoes
1 bell green pepper
1 bell red pepper
1/2 cup chopped fresh parsley
2 cloves of garlic
2 freshly squeezed lemon juice
4 tablespoons extra virgin olive oil
1 teaspoon coarse sea salt

The preparation:
1.Cut the eggplants to half,by removing the stem from top,do the same to red and green bell peppers cleaning the seeds,and white parts ,arrange them on a baking sheet,bake preheated oven 45 minutes at 425 degrees F.oven.
2.Let it cool then remove the skin ,just cut it roughly into small/medium diced pieces ,put it in the salad bowl then add chopped tomatoes, chopped parsley ,mashed garlic ,lemon juice olive oil and salt ,mix all together and serve,it’s delicious

Note :you can just dice, fresh, red and green peppers,and add to the salad ,in this picture I did bake them with eggplants
