Skinless bone-in chicken breasts with Brown rice,Balsamic vinegar salad and oven baked Sweet Potatoes.
Delicious light and very easy to prepare,this is my own recipe. Enjoy
Ingredients;
5 medium chicken breasts bone- in about (1-1/2 kg.)
2 large onions chopped.
3 tablespoons olive oil
2 cups water
2 tablespoons Cajun spice
Ingredients for Cajun spice:
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon oregano
1/2 teaspoon thyme
1/2 teaspoon mustard powder
1/2 teaspoon table salt
1/4 teaspoon black pepper
Preparation:
1.Heat a large deep stainless-steel pan over medium-high heat add oil ,place chicken breasts bone side down spice top of the breast with Cajun spice and brown breasts well ,flip and spice again with Cajun spice,keep aside drain all of oil keeping 1 tablespoon oil.
2.Add chopped onions with water, bring to the boil ,add chicken chicken breasts, reduce heat,simmer covered 45 minutes, uncover continue cooking further 10 minutes .
Serve hot with side dishes rice pilaf vegetables and salad.
Ingredients for Rice:
2 tablespoons olive oil
2 cups brown rice
4 cups water
2 tablespoons concentrated chicken bouillon
1/2 teaspoon coarse sea salt
Preparation for rice pilaf:
Heat at medium temperature a saucepan ,add oil and rice saute’ 5 minutes,add 4 cups of water and concentrated chicken bouillon,mix bring to boil cover with lid and simmer without stirring about 20 minutes until all water absorbed .Serve hot
Red potatoes:
4 Medium size sweet potatoes
1 teaspoon Cajun spice
1 tablespoon extra virgin-olive oil
Peel ,cut and wash red potatoes ,place and arrange on a baking sheet,drizzle with 1 tablespoon oil sprinkle with 1 teaspoon Cajun spice and bake at 375 degrees F. oven until soft and browned about 35-40 minutes.
Ingredients for salad:
1 small Romain lettuce
1 small curly lettuce
3 medium tomatoes
2 medium red radishes
Dressing for salad
3 tablespoons Balsamic vinegar
3 tablespoons olive oil
2 tablespoons mustard
1/2 teaspoon Armenian red hot pepper flakes (optional)
1/2 teaspoon coarse sea salt
Preparation:
Wash very well both lettuces drain then in salad drainer transfer into large salad bowl.
2.Wash tomatoes and radishes slice and dice into medium size cuts add to the bowl.
3.In hand blender container,add Balsamic vinegar ,mustard olive oil salt red hot pepper flakes and blend about a minute until thick mixture,Pour over salad and serve.
