Chicken casserole topped with potatoes.
This recipe originally made with chicken breasts ,and fried potatoes ,in this picture instead of frying the potatoes I broiled them and because I had some chicken thighs in my fridge I cooked with them. It’s very delicious you must try one day.Enjoy
Ingredients:
9 pieces of chicken thighs boneless ,skinless (1/2 kg.or a pound of Chicken breasts)
1/4 cup vegetable oil
1 teaspoon Lebanese 7 spice mix
1/2 teaspoon curcuma
1/2 teaspoon freshly ground black pepper
1/2 teaspoon coarse sea salt
3 cups of boiled water
6 whole eggs
7 cloves garlic mashed with 1/2 teaspoon salt
3 tablespoons chopped parsley or 2 tablespoons dried parsley
11 large potatoes ,peel wash and cut round shapes 1/2 cm.thickness
3 tablespoons olive oil to brush potatoes and broil
1 egg beaten to brush over potatoes
Preparation:
1.Wash the chicken thighs and dry with paper towels.
2.Heat a large deep pot add 1/4 oil and brown both sides of the chicken thighs ,season with salt,7 Lebanese spice ,curcuma and black pepper.
3.Pour hot water on top of chicken and cook covered for 30 minutes,at medium heat.
4.Mash garlic with salt ,add to the pot and continue cooking uncovered until all the water absorbed.Leave aside to cool and shred into small pieces with hands .
5.In a container of hand blender add 6 eggs with parsley and blend for few seconds.Pour over shredded chicken mix well.
6.Meanwhile brush both sides of potatoes with olive oil and broil them turning once.
7.Grease an oven-proof casserole dish and line with half of the broiled potatoes.
8.Top with chicken mixture and cover with the rest of the potatoes,sprinkle with salt.
9.Brush top of potatoes with beaten 1 egg and bake in preheated oven at 350 degrees F.40 minutes.Serve hot with the choice of your favorite salad.
