This is a new recipe that I invented.I had fresh spinach,in my fridge I wanted to prepare something without meat, I mixed few recipe ingredients from my page and the outcome was very tasty.Enjoy
Ingredients:
Filling:
2 large bunches fresh spinach cooked squeezed and chopped (1 and half cup)
3 tablespoons olive oil
1 large onion chopped
1/4 teaspoon nutmeg
1/2 teaspoon coarse sea salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon hot red pepper flakes
1/4 teaspoon all-spice
1 cup Feta cheese crumbled
3 eggs lightly beaten
10 medium potatoes
1/2 teaspoon freshly ground black pepper
1 teaspoon coarse sea salt
White sauce :
4 cups 3.25%milk
1/4 cup unsalted butter
6 tablespoons flour
1/2 cup grated Parmesan cheese
1/2 teaspoon freshly ground black pepper
1/2 teaspoon nutmeg
1/2 cup grated Parmesan cheese
1/2 cup grated mixed cheeses or Mozzarella
Preparation:
1.Wash the spinach few times.Place in a pot of boiling water and boil for 2 minutes .Strain squeeze juice out and chop.
2.Heat a large skillet add olive oil,onions saute until they are translucent ,add spinach ,salt,all spices saute all together for 2 minutes.Remove from heat add feta cheese mix keep aside to cool.
3.In a small bowl beat eggs with a whisker until blended.Add to spinach mixture and mix to combine keep aside.
4.Prepare the white sauce:
-Heat the butter in medium pot,add flour,mix with whisker for 1 minute.
-Gradually add the milk,nutmeg black pepper,and cook by constantly stirring until the sauce slightly thickens,about 12 minutes.
-Take off from heat add 1/2 cup grated Parmesan cheese,mix,keep aside.
5.Wash,peel and slice thinly the potatoes,season with salt and pepper.Keep aside.
Assembly:
1.Grease with butter a baking dish (23.50×33.75cm./ 9.25×13.25) preheat oven 350 degrees F.
2.Layer half of sliced potatoes,in greased baking dish,top with prepared spinach mixture,sprinkle with 1/2 cup grated Parmesan cheese.
3.Cover with the rest potatoes and pour prepared white sauce evenly over layered casserole.
4.Place in preheated oven and cook for 1 hour 10 minutes.
5.Remove from oven sprinkle with grated mixed cheese or Mozzarella and continue cooking in oven about 10 minutes or until the top is golden brown.
Serve hot
