Healthy, easy to prepare muffins. Great for breakfast or any time.
I saw this recipe from Facebook (Tasty) page, everyone was liking and sharing; quickly I decided to prepare.I had all the ingredients, but instead of maple syrup,I used honey,and I add raisins and walnuts in the mixture,because of raisins and walnuts the mixture was for 24 muffins instead of 12. The topping I placed some crushed walnuts and baked,the aroma was amazing.
We enjoyed with cup of Coffee, it was very good I liked it because of all the healthy ingredients in it, kind of banana bread but in muffin shapes. Prepare one day and add your favorite fruit toppings fresh or dried.Enjoy

Ingredients: ( 24 medium muffin cups)
2 bananas (ripe)
2 eggs
1/3 cup honey or (Maple syrup)
1/4 teaspoon fine salt
2 teaspoons baking powder
2 teaspoons vanilla extract
1 tablespoon cinnamon powder
1 cup plain yogurt
3 cups Quick oats (cooks in seconds)
1 cup milk
1/2 cups walnuts (optional)
1/2 cup raisins (optional)

Topping:
1/4 cup medium crushed walnuts (or any Preferred topping cranberries,apples,blueberries,almonds)

Preparation:
1.Preheat oven 350 degrees F. .Grease Muffin tins(cups) with butter or use muffin liners.
2.In a medium bowl,mash bananas with fork.
3.Add two eggs,honey,salt,baking powder,vanilla extract,cinnamon,and plain yogurt mix all with fork.
4.Add oats,milk, mix and let it sit for 10 minutes,to be thicken .
5.Add 1/2 cup walnuts,raisins mix and pour the mixture into each muffin cup about 3/4 full.
6.Top each with crushed walnuts (1/4 cup)or add your preferred toppings.
7.Bake 30 minutes in preheated oven at 350 degrees F.
8. let cool for 5 minutes .Once cool, store in an airtight containers
