Delicious popular food cooked in homemade chicken,meat broth,with coriander,garlic,lemon mixture,served over rice pilaf topped with chicken meat pieces,toasted pita breads,and with vinegar onion mixture.Very tasty and healthy food one of my family’s favorite. Enjoy
The ingredients serves 16 people. The reason I cooked large quantity to give the left overs to my children.

Ingredients:Broth
2 whole chickens (3kg.)
750 g. veal tail or any beef meat with bone
2 pieces of bay leaves
1 cinnamon stick
5 cloves
10 peppercorns
water

6 packages frozen finely chopped, Mouloukhieh product EGYPT (each 400 g.)
14 cups chicken and meat broth
1 large fresh chopped coriander (1 generous chopped leaves)
26 garlic cloves,peeled
2 tablespoons coarse sea salt
2 lemon juice (1/2 cup )
6 tablespoons olive oil

For vinegar sauce:
2 cups red vinegar
1 large finely chopped red onion (1 cup)
1 teaspoon coarse sea salt

Pita bread for top
4-5 pita breads opened and toasted in oven

The rice :
4 tablespoons olive oil
4 cups rice washed and drained
8 cups prepared broth
1 teaspoon coarse sea salt

Preparation:Broth
1.Place chicken and meat in large pot .Bring to boil over high heat, discard the foams with a large spoon.
2.Add bay leaves,cinnamon,cloves and peppercorns,reduce the heat to medium cover with the lid and cook for 2 hours.
3.Strain the broth.Place in fridge, then spoon out the fat from the surface. Discard the bones,from chicken and meat put them in separate oven proof dishes,cover keep warm
4.Keep aside 8 cups of prepared fat reduced broth in a container for rice pilaf ;and pour the rest 14 cups in a large pot.

Preparation;Mouloukhieh
5.Heat 14 cups broth bring to boil.Add frozen Mouloukhieh without thawing to the pot,cook uncovered for 15 minutes,until all dissolves.
6.In a container add 6 tablespoons olive oil,23 cloves garlic,2 tablespoons salt and mash with hand electric blender until smooth mixture.Wash drain and chop coriander finely.Freshly squeeze the lemons.
7.Heat a medium skillet,add garlic oil mixture,saute’ for a second,add chopped coriander,mix few minutes,then add the lemon juice,mix take out of heat.
8.Pour sauteed coriander mixture over boiled mouloukhieh,and continue cooking uncovered at medium- high heat for 20 minutes.
9.Meanwhile toast pita breads,keep aside.Prepare vinegar onion mixture:In a small bowl add chopped onion, vinegar and salt mix cover keep aside in fridge for later use.

Rice pilaf:
1.Heat a sauce pan,add olive oil,rice and saute’ for few minutes,then add 8 cups prepared broth,salt, bring to boil reduce the heat to medium-low cover and cook for 20 minutes

How to serve mouloukhieh;
In a dish place rice pilaf,chicken meat pieces,ladle hot mouloukhieh on top then add toasted pita breads,few tablespoons vinegar onion mixture and enjoy.

Tip:
you can cook whole chicken,meat overnight.Strain the broth keep in fridge for few hours then scrape with spoon all the fat.Discard the fat.
– First keep aside prepared broth for rice; keep the rest for mouloukhieh, if you’ll have less broth add water.( for 14 cups=add 12 cups + 2 cups water) do not add more water you’ll loose the rich taste of the broth.
