Grilled Eggplants topped with ground meat and mozzarella cheese.Tasty appetizer.Enjoy
Ingredients:
2 large eggplants
1/2 kilo lean ground meat (beef)
2 tablespoons olive oil an extra 2 tablespoons to brush over eggplants.
2 medium onions,finely chopped
2 cloves of minced garlic
1/2 teaspoon coarse sea salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon all-spice
1/2 teaspoon hot red pepper paste
700 ml.ground tomatoes sauce
100 gr. shredded Mozzarella
Preparation:
1.Heat a saucepan over medium temperature,add olive oil,chopped onions,saute’ for 2 minutes.
2. Add minced garlic,ground beef and continue sauteing for 10 minutes.Stir in the tomato sauce, spices and simmer covered at medium-low heat for 30 minutes.
3.Slice eggplants round shapes,brush both sides with olive oil and grill them in hot barbeque .
4.Spoon cooked ground meat mixture on grilled eggplants, top with shredded Mozzarella cheese and keep them on grill additional 2 minutes.Serve hot.
