Lentil Salad
Lebanese Delicious Healthy lentil Salad
Ingredients:
2 cups brown lentils
1/4 cup extra virgin olive oil plus 2 tablespoons to saute the garlic
18 cloves garlic minced
2 large freshly squeezed lemon juice (10 tablespoons)
2 teaspoons ground cumin
1/2 teaspoon Armenian hot red pepper
1/2 teaspoon allspice
1 teaspoon kosher sea salt
1/2 teaspoon black pepper
1 cup chopped parsley finely
Preparation:
1.Clean the lentils discard small stones,rinse .
2.In a medium saucepan add 6 cups of water add 2 cups of lentils ,bring to boil ,reduce heat to medium-low simmer covered until the lentils are tender about 35 minutes;drain well and transfer to a salad bowl.
3.In a nonstick skillet add 2 tablespoons olive oil add minced garlic and saute at very low heat for about 7 minutes,remove pan from heat.
4.In a container of hand blender add sauteed garlic with 10 tablespoons lemon juice,1/4 cup olive oil , cumin, ,salt, black pepper, red pepper and pulse for a minute.
5.Pour the garlic mixture over lentils ,add chopped parsley and stir gently to combine.
6.Serve lentil salad at room temperature or keep in fridge overnight and serve cold.
