Grilled or broiled eggplant salad .
Step by step how to prepare eggplant salad.
This time I broiled my vegetables in oven.To have a tasty salad, it’s important to have a tasty salad dressing,cooked vegetables get more sweeter.The eggplants that I used are purple large eggplants use any kind you prefer it works perfectly. Enjoy.
Ingredients:
2 large eggplants
4 tomatoes
2 bell green peppers
2 bell red peppers
4 medium red onions
Salad dressing:
3 large cloves of garlic or(4 teaspoons mashed garlic)
3 large freshly squeezed lemon juice
1/2 cup chopped fresh parsley
1/4 cup extra virgin olive oil
2 teaspoons coarse sea salt
The preparation:
1.Wash eggplants pick few places with knife, arrange in a large baking pan sheet ,in the same pan arrange green and red peppers,tomatoes and onions.
2.Place the pan in oven and broil well,by turning to the other sides.Tomatoes will cook quicker,take them out first and keep in another pan until the rest are broiled.
3.Place peppers in separate dish and cover with plastic wrap .Arrange broiled onions and eggplants beside tomatoes,let it cool.
4. Remove the skin from eggplants, onions,tomatoes,remove seeds and skin from peppers.
5.Dice eggplants,peppers,onions and tomatoes roughly into small/medium pieces, put them in a large salad bowl.
6. Prepare the dressing.
Mash very well garlic with 2 teaspoons coarse salt,place in a small bowl,add olive oil,mix with fork add freshly squeezed lemon juice,mix for a second then add chopped parsley,mix keep aside.
7.Pour the dressing over grilled vegetables,mix cover with plastic wrap and keep them in fridge at least one hour,or until serving time;you can prepare them a day before .Serve cold
