Purple Cabbage coleslaw / light and healthy dressing
Ingredients:
1 whole medium size purple cabbage
1/2 cup extra virgin olive oil
5 cloves of garlic
3 freshly squeezed lemon juice
1/2 teaspoon paprika
1/2 teaspoon salt
preparation:
Remove and discard outside leaves from the cabbage cut the cabbage into very thin slices ,or do like me use food processor ,it’s more easy.
In a container of hand blender,add olive oil with the garlic ,mash few second ,then add the lemon juice ,salt and paprika mix all very well ,pour over cabbage,chill at least 2 hours or overnight.
