Preparing these pizza is my youngest daughter Talin’s idea,having lots of butternut squash in my garden,I decided to give a try .I sliced butternut squash into round shapes after baking in oven I topped with my favorite toppings and baked again in oven.They turned out very good the squash crust was strong enough to hold plenty of cheese and sauce you can hold and eat by hand.Serve as an delicious healthy appetizers .Enjoy

Ingredients:
2 long neck butternut squashes
1/2 teaspoon freshly ground black pepper
1/2 teaspoon fine sea salt
2 tablespoons extra virgin olive oil ( grease 1 tablespoon the wax paper and brush 1 tablespoon over sliced squashes).

Tomato sauce:
1 can tomato sauce (680ml.(you can use tomato sauce with onions,Herbs & spices too)
2 tablespoons extra virgin olive oil
2 medium chopped onions
1 teaspoon hot red pepper paste
Topping:
2 green bell peppers smally diced
1 cup (398ml.)sliced black olives
2 cups shredded 4 kind cheeses /Provolone/Mozzarella/Romano/Emental)

Preparation:
1.Cover large baking sheet pan with wax paper,brush with 1 tablespoon olive oil.
2.Wash squashes under running water.Peel the skin with potato peeler and cut into round shapes each 1cm.thick slice. (My squashes are from my garden the squash skin was very fresh I didn’t peel .)
3.Arrange sliced squashes side by side over wax paper.Brush each top with olive oil and season with black pepper and salt.
4.Preheat oven 400 degrees F. Place the baking sheet in oven and bake 45-60 minutes until the top and bottom are browned you don’t need to turn the other side
5.Prepare tomato sauce:
Heat a medium saucepan ,add olive oil ,chopped onions saute at medium- high until onions are pale in color.Add tomato puree,hot pepper paste, stir cover slightly & cook at medium temperature for 20 minutes.
6.Top each baked squash slices with 1 tablespoon of the mixed shredded cheese(1 cup ),then spread 1 tablespoon tomato sauce,top with diced green peppers and sliced black olives.
7.Preheat oven 350 degrees F..Place squashes in preheated oven and bake for 15 minutes.
8.Take out from oven ,top with the rest of shredded cheese and put back to oven and bake additional 7 minutes .
9.Serve hot ,or room temperature.

Tip:
– Prepare and bake squashes overnight and keep in fridge for next day preparation.
-.you can bbq. or broil in oven the squashes but you should brown both sides.

-Prepare the tomato sauce too overnight keep in fridge
